  • 1 cup frozen corn
  • 1/2 cup uncooked long-grain brown rice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for about 5 minutes, until the onion is softened and translucent.

2. Add the leek, carrots, zucchini, bell pepper, oregano, thyme, turmeric, cumin, and coriander. Cook for about 5 minutes, stirring occasionally.

3. Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce the heat and simmer for about 10 minutes, until the vegetables are tender.

4. Add the chickpeas, corn, and rice. Simmer for about 20 minutes, or until the rice is cooked through.

5. Stir in the parsley, and season with salt and pepper to taste. Serve hot.

Tips

This soup is a great way to use up any leftover vegetables you have in your fridge. Feel free to add any other vegetables you like, such as broccoli, cauliflower, or mushrooms.
